How to make Mocha warmer


Ingredients:


  • 2 cups(16fl oz)strong,hot coffee

  • 2 cups(16fl oz)boiling water

  • 1 tablespoon cocoa

  • 1 tablespoon sugar



Pour the coffee into 4 cups.Pour a little of the boiling milk onto the cocoa and sugar mixed together,and stir until smooth.Add remaining milk,stirring briskly,then fill up the half cups of coffee with cocoa mixture.serve hot.

How to make three potato omelette

Ingredients:


  • 5 tablespoons olive oil

  • 1 large onion,finely chopped

  • 1cup(5oz)peeled and diced sweet potato

  • 1 medium potato,peeled and diced

  • 1/2 teaspoon ground cumin

  • 1 teaspoon salt

  • 1/2 teaspoon ground black pepper

  • 3 tablespoons toasted sesame seeds

  • 3 large eggs

  • salt and papper to taste

  • chopped parsley to garnish


Heat 2 tablespoons of the oil and gently fry the onion,stirring occasionally,until soft and translucent.Meanwhile,cook the kumara,sweet potato and potato in lightly salted boiling water until tender.Drain.


Add the garlic,cumin,salt and pepper to the onions,then add the kumara(yam),sweet potato and potato,and cook for 2 minutes longer.Turn off heat,stir in sesame seeds.


Beat the eggs with salt and papper.Heat remaining olive oil in a large frying pan,swirling to coat the pan,then pour in the eggs.Allow to set on bottom,then spread the potato mixture evenly over the eggs.When browned on the bottom,place the pan under a preheated griller(boiler)(protect handle of the pan by wrapping in foil)until top is set and lightly browned.Cut into wedges,garnish with parsley and serve.

How to make Cheese puffs


Ingredient:


  • 2-3 cups(8-12oz)finely grated cheese

  • 1 egg beaten

  • 1 teaspoon prepared mustard

  • pepper to taste

  • slightly stale sliced bread

  • butter or margarine


Put the cheese into a bowl and mix in just enough beaten egg to moisten.Stir in the mustard and seasoning.Trim crust off bread,butter the slices,then spread thickly with the cheese mixture and cut with a sharp knife into triangles or fingers.Place on a baking tray and bake in an oven preheated to 190 C(375 F)until the cheese topping is puffed and golden.serve warm.


Makes:about 24 bite-size savouries

How to make Hummus(tahini)


Ingredients:


  • 250g(8oz)dried chick peas

  • 1/2 cup lemon juice

  • 3 large cloves garlic

  • 1 1/2 teaspoons salt,or to taste

  • 1/2 cup(4oz)tahini(sesame seed paste)

  • olive oil

  • paprika or chopped parsley


Soak the chick peas overnight or for 24hours in plenty of cold water to cover.Drain,put into saucepan or pressure cooker with fresh water and boil until soft enough to be mashed between the fingers,about 2 hours in a saucepan or 35 minutes under pressure.Drain peas,reserving liquid.set aside a few whole peas for garnishing.


Put the chick peas in an electric blender or food processor,adding some of the cooking liquid if necessary.Mix in the lemon juice and garlic crusher with salt.Add tahini and mix well.Taste and add more lemon juice or salt if necessary consistency should be that of thick mayonnaise.If too thick,add a little water.


Spread on a plate,pour a little oil over the surface and garnish with reserved whole peas and a sprinkle of paprika or parsley.


Serves:6-8

How to make Felafel


Ingredients:


  • 250g(8oz)dried chick peas

  • 4 tablespoons cracked wheat(burghul or bulgur)

  • 1 or 2 cloves garlic,crushed

  • 2 1/2 teaspoons salt

  • 3 tablespoons wholemeal(whole wheat) flour

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1/2 teaspoon ground black pepper

  • 4 tablespoons finely chopped spring onions(scallions)

  • 2 tablespoons finely chopped fresh coriander

  • 1 tablespoon lemon juice

  • 1 egg beaten

  • oil,for deep-frying


Soak the chick peas in plenty of water overnight or preferably for 24 hours.Drain well and grind in a food processor.Soak the cracked wheat in cold water for 1 hour,squeeze out all moisture.


Combine all the ingredients,except oil.in a bowl.Mix thoroughly with hands to a moulding consistency.If too moist,sprinkle in a very little more flour,and if it is too dry,add a little more beaten egg.Shape into a walnut sized balls.


Fry in hot,deep oil over medium heat for 5 minutes or until golden brown all over and cooked in the centre.Do not crowd them into the pan.Drain on absorbent paper and serve warm or at room temperature.
